Chicken and Mushroom Recipes

This dish goes well with rotini pasta and topped with parmesan cheese. Serve a mixed green salad and your meal is complete.

Serving size: 6 Servings

Ingredients: Chicken and Mushroom Recipes

  • 6 boneless, skinless chicken breast (about 6 ounces each)
  • 2 tablespoons flour
  • ½ teaspoon salt
  • ½ teaspoon black pepper
  • 1 tablespoon olive oil
  • 6 cloves garlic, peeled
  • 1 pound of mushrooms cut in 4 pieces
  • ¼ cup balsamic vinegar
  • 1 cup chicken broth/stock
  • ¼ teaspoon thyme

Directions:

1. Dredge the chicken pieces in flour, which has been seasoned with salt and pepper, shaking off the excess flour.

2. Heat the oil over medium-high (375 degrees) heat in a large heavy skillet, preferably one with non-stick surface, add the chicken, and cook the chicken for 3 minutes on each side or until browns.

3. Add garlic, turn the chicken pieces over, and scatter the mushrooms over the chicken. Cook the ingredients for about 3 minutes, shaking the skillet to distribute the mushrooms. Add the vinegar, broth, and thyme. Cover the skillet and cook the chicken on medium-low (175 degrees) heat for 10 minutes, turning the chicken once as it cooks. Remove chicken and place on platter and keep warm. Over high heat (450 degrees) cook the mushroom mixture 5 -7 minutes more to thicken sauce. Pour over chicken and serve.
